I put a little olive oil in the pan and lightly coat the vidalia onions and tomatoes. Put the cod loin in the middle And very lightly massage with oil, Himalayan salt and black pepper. Put the tomatoes and onions around it and fresh basil. Put a few pads of butter on the top of the fish. Sometimes I used kale on bigger chunks instead of basil.
Bake at 350 for 15 minutes then broil for the last few minutes to crisp up the top. The broth is so good!
