Corona Cookbook: Carrots

I was a big fan of roasted and caramelized carrots, made with brown sugar, honey and butter.

The flavor is burnt carrots oozing with sweetness was my ticket to Vitamin A until I played around with the carrots to create another dish.

 

Ingredients:

3 pounds of carrots, peeled and cut into strips

2 tablespoons of lime juice

2 teaspoons of Cumin

2 teaspoons of Chili Mix

1 teaspoon of garlic powder

2 jalapeños minced

2 handfuls of grated Asiago

Procedure:

Turn on oven to 450F

Line the cut carrots on a sprayed foil covered baking sheet

Top with ingredients listed above and top with cheese

Bake for 45 minutes

Enjoy warm or cold
