Ramen to Go

Coming off the summer marathon, Chef Nick and his team are back with more breathing room and brain space to start getting creative with fall-inspired dishes. As the leaves began falling to the ground, Chef was inspired to create ramen: only available for takeout!

Why do ramen? It's sustainable, comforting, and delicious.  Utilizing the entirety of East Mountain Farm chickens, Chef and his team start with building a rich stock that will become the base of ramen bowl #1. 

To kick it off, we are offering a chicken broth ramen and a vegetarian variation. Both will sell for $16 and will be available for takeout starting.

Ramen Bowl #1 (Chicken & Pork)
Roasted East Mountain Farm chicken bones make the base of this hearty stock, with heavily charred onions and carrots that simmer throughout the day with soy sauce, mirin, and lime juice. Topped with housemade kimchi (composed of Mighty Food Farm vegetables), pickled mushrooms, soft-boiled farm egg, and ginger scallion braised pork belly.

Ramen Bowl #2 (Veggie)
Maitake + shiitake mushrooms make an umami stock combined with heavily charred onions and carrots slowly simmered with soy sauce, mirin, and lime juice, topped with housemade kimchi (composed of Mighty Food Farm vegetables), pickled mushrooms, soft-boiled farm egg, and miso-glazed winter squash
